Sumayya Usmani delivers a cookery demonstration at Ballymaloe Cookery School hosted by Rachel Allen 
 

We are looking forward to welcoming Sumayya to Litfest and to her introducing us to the rich and distinctive flavours of the food of Pakistan.

Sumayya Usmani is a writer and cookery teacher based in Glasgow, Scotland. She specialises in the cuisine of Pakistan and travels regularly to her homeland. Sumayya teaches Pakistani cookery at various schools across the UK and her debut book Summers Under the Tamarind Tree won the Best First Cookbook category in the Gourmand World Cookbook Awards. It was also shortlisted for the Food & Travel Awards 2016, the Edward Stanford Travel Writing Awards 2016, and was voted a cookbook of the year in many publications including The GuardianIndependentIrish Times and Sunday Herald.  Sumayya advocates cooking by "andaza", (sensory and estimation cooking), which is how she learnt to cook from her mother and grandmothers from a very young age. She appears frequently in the media online, in print and on television, and is a co-presenter of BBC Radio Scotland’s The Kitchen Café. Madhur Jaffrey described her book, ‘Summers under the Tamarind Tree’ as a treasure.

- Hyderabadi-style samosa's 

- Cold-smoked bihari beef kebabs

- Attock Chana Riagi – chickpea and cumin pulao

- Dadi's Puris

- Baluchi-style chicken sajji

- Squid, Mussel and prawn biryani

- Sindhi karri –yoghurt and turmeric soup

It is the only festival of its kind in Ireland and has created an important hub for food and drinks enthusiasts worldwide to meet and share ideas with each other.
