Pascal Rossignol was born and grew up in Gevrey-Chambertin, Burgundy.

Pascal worked with Burgundy wine producer and first cousin Joseph Roty before embarking in a career in the Restaurant and Hotel industry. In 1999, he opened Le Caveau in Kilkenny with his wife Geraldine. Pascal focus is on sourcing wines true to their origins, from small artisan winegrowers. For the past nine years, Pascal is a guest wine lecturer at Ballymaloe Cookery School teaching the students about organic, biodynamic and natural wines, during the 12-week Certificate course.

Litfest - A Food and Drinks Literacy Festival at Ballymaloe is a weekend filled with fascinating facts, inspirational stories, intriguing discussions, incredible knowledge, fantastic music, fabulous dancing and of course, delicious food and drinks.
 
It is the only festival of its kind in Ireland and has created an important hub for food and drinks enthusiasts worldwide to meet and share ideas with each other.
